Pineapple Delight: Dessert That's Light as a Cloud and it Melts in Your Mouth

Pineapple delight offers a creamy taste of the tropics. This is a dessert recipe you'll make again and again.
Making pineapple delight isn't difficult and it is definitely worth the effort because this recipe makes a pan of pure "delight."
Pineapple delight should be made in an oblong dish and can then be easily cut into squares.
The creamy taste of this dessert makes it perfect for the summertime picnic or potluck. After hamburgers, hotdogs and potato chips, pineapple delight is a welcome finish to a meal.
Crust for Pineapple Delight Recipe
Step I
- 2 cups crushed graham wafers
- 1/2 cup (scant) melted butter
Mix thoroughly and keep out 1/2 cup for top of pineapple delight squares. Press mixture into a 9"x12"- 9"X13" oblong pan. Bake 10 minutes at 300 degrees. Cool completely.
Pineapple Delight Icing Layer
Step II
- 1-1 1/2 cups icing sugar
- 1/2 cup butter
- Vanilla to taste (1/2 tsp.)
- Enough milk or cream to make spreadable
Mix well and spread on completely cooled graham crust.
Pineapple Delight Filling
Step III
- 1 ("fat") tin of crushed pineapple (well drained)
- 1/2 pint (or more) whipping cream
Whip cream until stiff. Fold in pineapple. Spread on second icing layer.
Pineapple Delight Crumb Topping
Step IV
Top pineapple delight with the reserved graham cracker crumbs. Cover and chill in fridge overnight so that pineapple delight sets and the flavors combine.
Slice pineapple delight into squares and enjoy!

A baking pan with a storage lid is a good option. You can make your dessert and then snap on the lid, without having to hassle with tin foil.
If you plan on taking pineapple delight to a potluck, using a pan with a lid is a practical idea if you have to transport your dessert in a car or are worried about flys landing on it.

I first had this at a summer potluck and was hooked! It was the perfect, creamy dessert. Next time I make pineapple delight, I'll post pictures.
My mom made this when I was young - it is the most delicious light desert to serve after a big meal. Today I made the first layer with cream cheese and butter and icing sugar, then the whip cream and pineapple layer on top - it was superb!!!!
Im 69 yrs old now and first tasted this around Christmas when I was about 12 years old at Mrs Stokes' a friend of the family. It was so delecious that I had seconds and thirds. I made it once but it didn't match hers. Will be making it this week. Getting all the stuff together and will enjoy it over Xmas. Thank you Mrs. Stokes where ever you are.

The butter holds the crust together. The butter also blends with the icing sugar to make the icing layer. You don't taste it once your pineapple delight is made. I first tasted this at a potluck and thought it was wonderful.
thank you for mouth watering chats. Pine apple tastes like apple and orange collectively. why do you add butter in your dish? Its taste is entirely different.
