Chocolate Peanut Clusters
Chocolate peanut clusters are great for when you are short on time but still need something to serve company. No-bake cookies are delicious and so easy to make.
These no chocolate peanut cluster cookies whip up quickly and easily and, if you love chocolate and peanuts, this no-bake recipe fits the bill.
Recipe for Chocolate Peanut Clusters
1 cup chocolate chips
16 large marshmallows
1/3 cup butter
1 tbsp. instant coffee
2 cups roasted (unsalted) peanuts
Combine chips, marshmallows, and butter on very low heat. Add coffee. Stir until melted and smooth. Remove from heat and stir in nuts. Drop cluster cookies on buttered foil-lined pan and place in fridge until set.
This chocolate peanut cluster cookie recipe is handy to have on hand. Mocha peanut clusters are a great addition to holiday baking.

That cookbook sounds like a good one.
I always thought that unbaked cookies wouldn't be all that good--until I sampled them (recipes I've included in my HubPages). The lady who gave them to me, came from England. She'd guarded the recipes for years as a family secret, then finally decided to share them after repeated requests.
I discovered Camilla Saulsbury's No Bake Cookies book at the library and have been having such fun trying her ingenious recipes. This is a simple paperback cookbook with no pictures, but I highly recommend it's simple creative no bake cookies recipes.
