I visited a lavender farm and sampled some lavender shortbread--and was hooked! I hope you enjoy these cookies as much as I do.

When you are looking for something easy-to-make but want something special, shortbread cookies made with lavender can be just the thing.

Lavender goes particularly well with sugar so adding some to shortbread cookies is a natural fit. Lavender imparts an exotic flavor to shortbread.

You can serve these cookies plain or dust them with sifted icing sugar, as seen in the first picture.

You'll need to have culinary lavender buds on hand. These can be purchased either locally or online. Culinary lavender usually comes in small packets.

Creaming Butter

Lavender Shortbread

1 cup butter

Make sure your butter is soft to start with so that it is easy to cream, prior to adding other ingredients.

Add 1/2 cup icing sugar

Sift in icing sugar to the creamed butter and work with a wooden spoon or beaters so that mixture is well blended, ensuring that no icing sugar lumps remain.

Sifting in Corn Starch and Flour

Sift in 1/2 cup corn starch + 1 1/2 cup of flour

It is important to sift dry ingredients so that cookies are light.

Stir mixture with a gently spoon, then work with hands, gently kneading until cookie dough forms a ball

Sprinkle a light dusting of flour on counter and roll out shortbread dough. Cut into desired shapes and place on an ungreased cookie sheet.

Bake in a 300 degree oven for 15-20 minutes, making sure that cookies do not over-brown. (Double-pan to protect cookie bottoms from over-browning.)

Remove lavender shortbread from oven and let cookies cool in pan.

If desired, dust cookies with sifted icing sugar. Store in a covered container

Oh yes yes yes! A few years back I actually found some of these sold at my local supermarket - they were outstanding. I had so many tea parties - gave them as gifts and I thought the magic would last forever.

Then one fine day I went to get a carton and there were no more - and they were never sold again. And I have never seen them anywhere else.

But now - I can bake them. I even have real lavender. Thanks so much - I will bookmark this.
