Glazed Pineapple-Coconut Cake

Glazed pineapple-coconut cake is another favorite recipe we've used in our family for years. This moist cake cake whips up quickly and icing it is a snap because you simply pour the icing over the warm cake! No having to wait until your cake cools.
Pineapple-coconut cake tastes like it came right out of the tropics and is a great dessert item to take to potlucks or for when you are entertaining. It's a cross between a cake and a square and is different from the usual cakes. More interesting still, instead of having to wait until the cake cools, to ice it, you ice this cake as soon as you take it out of the oven. If you like glaze, this cake will become a favorite because you make the glaze and simply pour it over the cake. As the cake cools, the glaze sets up.
if you like the combination of pineapple and coconut, this cake offers the perfect taste. It is delicious, either with glaze icing or with a butter icing.
Recipe for Glazed Pinneapple-Coconut Cake
This couldn't get easier because you simply place all the ingredients into one bowl.
- 1 cup sugar
- 2 eggs
- 1 small fat can of crushed pineapple
Beat these ingredients in a bowl, then add:
- 2 1/4 cup flour
- 1 tsp. salt
- 1 1/2 tsp. soda
- 1 tsp. vanilla
Blend in these ingredients and then add:
- 1 1/2 cup sweetened coconut
Scrape batter into a greased and floured 9x12" cake pan. Bake in a 325 degree oven, 20-30 minutes, then reduce heat until cake is done. Keep checking cake center until done.

Glaze for Pineapple-Coconut Cake
Pour this glaze onto warm cake
- 1/2 cup white sugar
- 1/2 cup butter or margarine
- 1/4 milk
Bring icing to a boil and boil, stirring, for 2-5 minutes. Reduce heat so that icing doesn't burn but maintain temperature so that it boils and thickens.
Remove from heat and stir in 1 tsp. vanilla. Pour over pineapple-coconut cake and set in fridge to cool.
Making pineapple-coconut is easy because you don't have to wait for the cake to cool before icing it. All ingredients are added to one bowl, which also makes this recipe a time-saver.
