Almond Cream: How to Make a Rich Cream From Nutritious Almonds

Almond cream is a wonderfully tasty concoction that offers a healthful alternative to cow's milk, making a nutritious topping for hot or cold cereals.

If you like thick, creamy-tasting toppings for your cereal but don't care for the calories/fats found in cow's milk, almond cream is the perfect substitute.

For those with milk allergies, almond cream is a dairy-free alternative, which means no more eating cereal dry.

What You'll Need for Almond Cream

To make almond cream, you will need:

  • Blender
  • Ground blanched almonds.
  • Water
  • Sweetener (honey, maple syrup, or real vanilla)

Almond Cream Recipe Using Ground Blanched Almonds

  1. Pour 1 cup of purified water into a blender
  2. Add 1-2 tbsp.of sweetener
  3. Add 1/2 cup of ground blanched almonds

This is the basic recipe. If you desire thicker almond cream, simply reduce the amount of water. If you want a thinner mixture try 1/4 of blanched ground almonds.

For a larger batch of almond cream, double recipe amounts.

* Recipe tip: By using blanched almonds you avoid having to strain your cream through a cheese cloth. Almond skins darken cream and may impart a bitter taste.

Using Whole Blanched Almonds to Make Almond Cream

If you prefer to use whole blanched almonds, use a Vita-Mix. These machines have sturdier blades, more power, and are suited for tackling tougher grinding tasks.

Yes, using blanched almonds cuts out having to use cheese cloth, which, to me, makes for more work and mess.

Years ago, I discovered that cow's milk gave me eczema, so I looked for milk alternatives. I was thrilled to find that almond milk and cream tasted so good and was so easy to make.

Additionally, eating almonds can be a real health-booster.

Thanks for the recipe. I’ve made almond cream before, although I’ve always used whole almonds. Your suggestion to use blanched almonds is a good one! Almond milk and cream are delicious, and I like the health benefits that you mention. It’s great that people who can’t or don’t want to eat dairy foods have such a healthy milk and cream alternative! I do eat dairy products, but I still love almond milk and cream.

If you want an almond milk, simply cut the ground almonds to 1/4 cup.

I will have to try that.....the very first thing we do in the morning is watch PBS for kids and eat cereal...something healthy in that routine has to be good
